Celebrating Our Roots

As we turn the page to a New Year, we believe it is also important to celebrate our roots.

At Birch we have chosen to do this both literally and metaphorically.

Our January menu will focus on celebrating root vegetables, one of the most fantastic and underappreciated crops in the Pacific Northwest, as well as Chef Jeffrey’s take on classical dishes.

Sommelier Zach Olsen will offer a wine pairing focusing on the roots of wine production and old world grape varietals.

Hygge

“Hygge (pronounced hue-guh) is a Danish word used when acknowledging a feeling or moment, whether alone or with friends, at home or out, ordinary or extraordinary as cozy, charming or special.” (*credit hyggehouse.com)

February in the Pacific Northwest brings cold weather and dreary skies but Birch remains cozy and warm, alit by our fireplace and candles. Chef Jeffrey has been inspired by hygge to offer warming comfort food in the month of February with a touch of Scandinavian influence. Whether reflected by the warmth of braised meat or the comfort of familiar spices, our February menu offers a comfortable, special place to escape from the cold of winter.

Our wine pairing reflects a similar level of comfort as Sommelier Zach Olson has chosen a selection of warming, familiar wines.
